4 pieces of whole grain bread
6 chopped whole watercress
2 carrots shredded
1 tablespoon lemon juice
1 tablespoon olive oil
3 tablespoons hummus
1 tomato sliced
1 cup spinach
Toast the bread. meanwhile mix the watercress, carrot, lemon juice and
olive oil together. Spread the hummus over each slice of toast. Top 1
slice with the watercress and carrot salad, and spinach sandwich with
another slice of toast and top with the tomato and spinach. Lay the
final slice of bread, houmous side down,
