Banana fritters:
3 bananas, mashed
1 cup flour
1 1/2 teaspoons baking powder
2 tablespoons sugar
1/4 teaspoon salt
1/3 cup milk
1 teaspoon lemon juice
1 egg
Preheat deep fat fryer.
Mash bananas using a fork or in a food processor.
Combine dry ingredients.
Add milk and lemon juice.
Beat egg and add to milk mixture.
Stir to combine.
Drop by tablespoonfuls into hot oil.
Fry until golden.
Let fritters drain on white paper towels.
Serve with a light dusting of powdered sugar.
